Kitchens, Hoods, Health Code, and Fast TI
The kitchen is the project. Type I exhaust hoods over cooking equipment, the matching makeup air, grease ductwork, fire suppression, and grease interceptors are the technical heart of any restaurant, and they drive the mechanical and plumbing design. TCG engineers them through in-house MEP engineering so the hood, makeup air, and HVAC balance correctly the first time instead of failing a final inspection.
Walk-in boxes and finishes. We self-perform the walk-in cooler and freezer IMP boxes rather than waiting on a separate vendor, and we self-perform the back-of-house flooring, typically quarry tile or resinous systems engineered for grease, water, and traffic, plus the front-of-house finishes that carry the brand. In a market this brand-driven, FOH quality matters as much as code compliance.
LA permitting and speed. Restaurants clear LADBS plus LA County Environmental Health, and outdoor dining or parklets add their own approvals. California seismic and Title 24 apply.
